Get creative with zucchini like never before by making this new appetizer with zucchini slices. It's easy to make and a truly delicious appetizer to savor.

Ingredients

  • 6 large zucchini, sliced into 1/4″-thick strips
  • 2 red capsicum
  • 3 tbsp. extra-virgin olive oil, divided
  • Kosher salt
  • Freshly ground black pepper
  • 120g Kiri Tub
  • Pinch of oregano
  • 1 tbsp. freshly chopped basil

Cooking steps

  1. Slice Zucchini lengthwise
  2. Grill Zucchini slices until charred and tender, 3 minutes per side.
  3. Grill Capsicum as is without removing stem, then set aside and remove stem and seeds
  4. Cut Grilled capsicum into long strips
  5. Stir together Kiri, remaining tablespoon olive oil, and crushed oregano and season with salt and pepper. Spread a layer of Kiri on zucchini and add red pepper
  6. Tightly roll up and serve.
