Ingredients

  • 10 Sambousa sheets
  • 30 slices of grilled eggplant
  • 5 Kiri cheese squares
  • Egg wash
  • Sumac
  • Olive oil
  • Garlic confit

Cooking steps

  1. Place the Sambousa sheet on working surface
  2. Add thin grilled layers of eggplant and Sprinkle sumac
  3. Place a Kiri cheese square on top
  4. Fold into a triangle shape and close with a flour water mix
  5. Bake at 180°C for about 20 minutes or until golden brown
