  • 10 Sambousa sheets
  • 30 slices of grilled eggplant
  • 5 Kiri squares
  • Egg wash
  • Summac
  • Olive oil
  • Garlic confit
  • 4 Kiri squares

Cooking steps

  1. Place Sambousa sheet on working surface, add thin grilled layers of eggplant
  2. Sprinkle sumac
  3. Place Kiri square
  4. Fold into triangle shape
  5. Close with flour water mix
  6. Bake at 180 for about 20 minutes or until golden brown
