A flavorful dish of chicken and meat biryani topped with a spiced Kiri Square sauce

Ingredients

For the Meat and Chicken biryani

  • 300g of minced meat, formed into balls and fried in oil
  • 600g chicken (boiled with bay leaves)
  • 8 cups of chicken stock
  • 3 cups of basmati rice (washed and drained)

For the Kiri Cream

  • 7 Kiri square portions
  • teaspoon black pepper, cumin, ground coriander, turmeric, cardamom, cinnamon
  • 3 garlic cloves (crushed)

Cooking steps

Cooking the Meat and Chicken biryani

  1. Boil the chicken in the stock until its cooked and then remove. Add rice to the stock and cook for 10 minutes then drain before its completely done.
  2. Heat the oil for 1 minute in a large cooking pan. Fry the onions until golden then add the cooked chicken slices, the fried meat, and half the quantity of the seasoning, then stir.

For the Kiri Cream

  1. Mix the yogurt, the Kiri squares, the remaining seasoning and the garlic in a blender.

Assembling

  1. Add the onions, chicken and meat to the rice then add the yogurt on top.
  2. Pour the saffron water on top of the yogurt.
  3. Cover the pan and leave it over low heat for 25 to 30 minutes until the rice is completely cooked.
