A flavorful dish of chicken and meat biryani topped with a spiced Kiri Square sauce
Ingredients
For the Meat and Chicken biryani
- 300g of minced meat, formed into balls and fried in oil
- 600g chicken (boiled with bay leaves)
- 8 cups of chicken stock
- 3 cups of basmati rice (washed and drained)
For the Kiri Cream
- 7 Kiri square portions
- teaspoon black pepper, cumin, ground coriander, turmeric, cardamom, cinnamon
- 3 garlic cloves (crushed)
Cooking steps
Cooking the Meat and Chicken biryani
- Boil the chicken in the stock until its cooked and then remove. Add rice to the stock and cook for 10 minutes then drain before its completely done.
- Heat the oil for 1 minute in a large cooking pan. Fry the onions until golden then add the cooked chicken slices, the fried meat, and half the quantity of the seasoning, then stir.
For the Kiri Cream
- Mix the yogurt, the Kiri squares, the remaining seasoning and the garlic in a blender.
Assembling
- Add the onions, chicken and meat to the rice then add the yogurt on top.
- Pour the saffron water on top of the yogurt.
- Cover the pan and leave it over low heat for 25 to 30 minutes until the rice is completely cooked.
