
Um Mourad’s Mini Hot Potato Jackets
Crispy baked potatoes filled with Kiri Square Portions and green onions
Ingredients
For the Potatoes
- 500g of small potatoes
- tablespoon olive oil
For the Kiri Mixture
- 6 Kiri square portions
- 2 green onions (finely chopped)
- 75g of mixed lettuce leaves

Cooking steps
Preparing the Potatoes
- Pre-heat the oven to 190 C for 10 minutes and pierce the potatoes. Then coat them with olive oil and bake them in the oven for 50 minutes.
For the Kiri Mixture
- Meanwhile, mix the Kiri square portions with green onions, olives and mint in a bowl.
- When the potatoes are baked, cut them in half vertically.
- Spoon the Kiri and onion mixture onto the potatoes.
