Crispy baked potatoes filled with Kiri Square Portions and green onions
Ingredients
For the Potatoes
- 500g of small potatoes
- tablespoon olive oil
For the Kiri Mixture
- 6 Kiri square portions
- 2 green onions (finely chopped)
- 75g of mixed lettuce leaves
Cooking steps
For the Mini Hot Potato Jackets
- Preheat the oven to 200°C.
- Wash the small potatoes thoroughly and pat them dry.
- Prick the potatoes with a fork and rub them with olive oil.
- Place the potatoes on a baking tray and bake in the preheated oven for 40-45 minutes or until they are tender.
- Once baked, allow the potatoes to cool slightly.
For the Kiri Mixture
- In a mixing bowl, mash the Kiri square portions with a fork.
- Add the finely chopped green onions and mixed lettuce leaves to the Kiri mixture and combine them well.
Assembling the Mini Hot Potato Jackets
- Using a sharp knife, cut a deep cross in the top of each potato.
- Gently squeeze the ends of each potato to open up the cuts.
- Spoon the Kiri mixture into the opening of each potato.
- Place the filled potatoes back into the oven for 5-10 minutes or until the Kiri mixture is hot and bubbly.
- Serve the mini hot potato jackets as a delicious appetizer or side dish. Enjoy!
