Bell Peppers Stuffed with Kiri by Rakan
Stuffed bell peppers with Kiri and homemade pesto
For the Bell Peppers
- 6 Kiri Square Portions
- 3 bell peppers
- 125g of dried tomato
- 40g of walnuts
- 1 tbsp of olive oil
For the Pesto
- 40g of fresh basil
- 2 tbsps of olive oil
- 25g of pine nuts
- 30g of parmesan cheese
Preparing the Stuffed Bell Peppers
- Cut the bell peppers
- Clean the bell peppers from the inside, then start stuffing them with Kiri Square Portions, walnuts, dried tomatoes and then cover it with another Kiri square portion.
- Place the bell peppers in a baking tray and place it in the oven at 180°C, for 20 minutes.
- For the pesto, mix the fresh basil, pine nuts, parmesan cheese and olive oil.
- Remove the bell peppers from the oven and drizzle the pesto sauce over it.
