Stuffed bell peppers with Kiri and homemade pesto

Ingredients

For the Bell Peppers

  • 6 Kiri Square Portions
  • 3 bell peppers
  • 125g of dried tomato
  • 40g of walnuts
  • 1 tbsp of olive oil
  • Salt

For the Pesto

  • 40g of fresh basil
  • 2 tbsps of olive oil
  • 25g of pine nuts
  • 30g of parmesan cheese
  • Salt

Cooking steps

Preparing the Stuffed Bell Peppers

  1. Cut the bell peppers
  2. Clean the bell peppers from the inside, then start stuffing them with Kiri Square Portions, walnuts, dried tomatoes and then cover it with another Kiri square portion.
  3. Place the bell peppers in a baking tray and place it in the oven at 180°C, for 20 minutes.
  4. For the pesto, mix the fresh basil, pine nuts, parmesan cheese and olive oil.
  5. Remove the bell peppers from the oven and drizzle the pesto sauce over it.
