A flavorful dish of chicken and meat biryani topped with a spiced Kiri Square sauce

Ingredients

For the Meat and Chicken biryani

  • 300g of minced meat, formed into balls and fried in oil
  • 600g chicken (boiled with bay leaves)
  • 8 cups of chicken stock
  • 3 cups of basmati rice (washed and drained)

For the Kiri Cream

  • 7 Kiri square portions
  • teaspoon black pepper, cumin, ground coriander, turmeric, cardamom, cinnamon
  • 3 garlic cloves (crushed)

Cooking steps

Cooking the Meat and Chicken biryani

  • 1Boil the chicken in the stock until its cooked and then remove. Add rice to the stock and cook for 10 minutes then drain before its completely done.
  • 2Heat the oil for 1 minute in a large cooking pan. Fry the onions until golden then add the cooked chicken slices, the fried meat, and half the quantity of the seasoning, then stir.

For the Kiri Cream

  • 1Mix the yogurt, the Kiri squares, the remaining seasoning and the garlic in a blender.

Assembling

  • 1Add the onions, chicken and meat to the rice then add the yogurt on top.
  • 2Pour the saffron water on top of the yogurt.
  • 3Cover the pan and leave it over low heat for 25 to 30 minutes until the rice is completely cooked.
