- Local pastrami slices
- Medjool dates
- Puff pastry dough

Cooking steps
Prepare the Filling:
- In a large bowl, mix Kiri square portions, orange zest, finely diced pickled lemon, and chopped Medjool dates until smooth.
- Add chopped chives and jalapeño to taste for extra flavor.
Prepare the Puff Pastry:
- Roll out the puff pastry dough and cut into desired shapes (squares or circles).
- Brush lightly with egg wash.
Bake the Pastry Shells:
- Place the shaped pastry on a baking tray and bake in a preheated oven at 150°C for 20 minutes, or until puffed and set.
- Allow to cool completely.
Assemble
- Spoon or pipe the cheese-date filling into the cooled pastry shells.
- Top with a slice of local pastrami.
Final Bake:
- Return filled pastries into the oven and bake at 170°C for 10 minutes, or until golden brown.
Serve:
