Kiri Minced Meat Bites
Soft baked dough bites filled with spiced minced meat or caramelized onions, finished with creamy Kiri cheese — perfect for prepping ahead of Ramadan and freezing.
Ingredients
For the Dough:
- 5 cups flour
- ¼ cup sugar
- 2 tbsp instant yeast
- ¼ cup milk powder
- 2 cups warm liquid milk
- 1 tsp salt
- ½ cup vegetable
Option 1: Minced Meat & Kiri Cheese Filling:
- Kiri Square Portions
- 2½ tbsp vegetable oil
- 300g minced beef
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 1 roasted bell pepper (chopped)
- Parsley, to taste
- 1 tbsp dried coriander
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp sumac
- Salt and black pepper, to taste
- 1 tbsp toasted pine nuts
- Pomegranate molasses, to drizzle
- Dried lime, to taste
- Sesame seeds, for topping
Option 2: Caramelized Onion & Kiri Cheese Filling:
- Kiri Square Portions
- 2 caramelized onions (sliced)
- Cashews, to taste
- Lemon juice or zest, as desired
- Salt and black pepper, to taste
- Chives, to taste

Cooking steps
Prepare the Dough:
- Combine flour, sugar, yeast, milk powder, salt, milk, and oil in a large bowl. Mix and knead into a smooth dough.
- Cover and let it rise for 1 hour, until doubled in size.
Prepare the Fillings:
- Minced Meat Option:
Sauté onion and garlic in oil, then add minced beef and cook until browned. Stir in Kiri, roasted bell pepper, parsley, spices, pine nuts, pomegranate molasses, dried lime, salt, and pepper. Cook until well combined, then let cool. - Caramelized Onion Option:
Simply combine caramelized onions with Kiri, cashews, lemon, salt, pepper, and chives.
Shape & Fill the Dough:
- Divide the risen dough into balls. Flatten each, then add your desired filling (minced meat or caramelized onion mixture with Kiri).
- For extra creaminess, stuff the dough edges with Kiri for a stuffed crust.
Top & Bake:
- Arrange stuffed dough balls on a baking tray. Sprinkle sesame seeds on top if desired.
- Bake in a preheated oven at 180°C for 15–20 minutes until golden brown.
