Kiri Greek Quinoa Oatmeal with Berries and Pecans®
Ingredients
For the Quinoa
- 100 grams (1/2 cup) cooked quinoa
- 100 ml (1/2 cup) milk (dairy or non-dairy)
- 2 teaspoons honey (or to taste)
For the Kiri® Cream
- 2 Kiri® Greek Style Portions
- 120 grams (1/2 cup) plain yogurt
- 1 teaspoon honey (or to taste)
- 1 teaspoon vanilla extract
Toppings
- 50 grams (1/4 cup) blueberries
- 25 grams (1/8 cup) raspberries
- 1 tablespoon chopped walnuts
- Mint leaves
Cooking steps
Preparing the quinoa
- Place the cooked quinoa, milk, and honey in a saucepan over medium heat.
- Bring the mixture to a boil, then cook for 5 minutes or until the mixture starts to thicken. Set aside to cool for 5 minutes.
Preparing the Kiri® cream
- Place the Kiri® Greek Style Portions in a bowl and mash them with a spoon until they are smooth.
- Add the yoghurt, honey, and vanilla extract, then mix to combine.
Serving the Greek style quinoa bowl
- Add half of the Kiri® cream to the quinoa mixture. Mix to combine then place in the serving bowl.
- Add the remaining Kiri cream on top. Decorate with the berries, walnuts, and mint leaves, then serve immediately.
