Ingredients
- Kiri Square Portions
- Biscuits
- Cinnamon
- Butter
- Granulated sugar
- Brown sugar
- Hazelnuts
- Agar agar or gelatin
- Dehydrated rose petals
- Diced apricot
- Citrus zest
- Sea salt
- Rose water

Cooking steps
Prepare the Base:
- Crush biscuits into fine crumbs.
- Mix with melted butter, sea salt, cinnamon, and sugars until the mixture resembles wet sand.
Prepare the Cheese Filling:
- In a bowl, mix Kiri square portions with diced dried apricots, hydrated agar agar (or gelatin), citrus zest, and rose water until smooth.
Assemble:
- Press the biscuit mixture into pyramid molds as the base.
- Spoon or pipe the Kiri mixture on top of the biscuit base.
- Sprinkle with chopped hazelnuts if desired.
Freeze and Finish:
- Freeze the filled molds until set.
- Carefully unmold and plate.
