Kiri Greek Quinoa Oatmeal with Berries and Pecans

Ingredients

For the Quinoa

  • 100 grams (1/2 cup) cooked quinoa
  • 100 ml (1/2 cup) milk (dairy or non-dairy)
  • 2 teaspoons honey (or to taste)

For the Kiri® Cream

  • 2 Kiri® Greek Style Portions
  • 120 grams (1/2 cup) plain yogurt
  • 1 teaspoon honey (or to taste)
  • 1 teaspoon vanilla extract

Toppings

  • 50 grams (1/4 cup) blueberries
  • 25 grams (1/8 cup) raspberries
  • 1 tablespoon chopped walnuts
  • Mint leaves

Cooking steps

Preparing the quinoa

  • 1Place the cooked quinoa, milk, and honey in a saucepan over medium heat.
  • 2Bring the mixture to a boil, then cook for 5 minutes or until the mixture starts to thicken. Set aside to cool for 5 minutes.

Preparing the Kiri® cream

  • 1Place the Kiri® Greek Style Portions in a bowl and mash them with a spoon until they are smooth.
  • 2Add the yoghurt, honey, and vanilla extract, then mix to combine.

Serving the Greek style quinoa bowl

  • 1Add half of the Kiri® cream to the quinoa mixture. Mix to combine then place in the serving bowl.
  • 2Add the remaining Kiri cream on top. Decorate with the berries, walnuts, and mint leaves, then serve immediately.
