  • Orange zest
  • Local pastrami slices
  • Medjool dates
  • Puff pastry dough
  • Chives
  • Pickled lemon

Cooking steps

Prepare the Filling:

  1. In a large bowl, mix Kiri square portions, orange zest, finely diced pickled lemon, and chopped Medjool dates until smooth.
  2. Add chopped chives and jalapeño to taste for extra flavor.

Prepare the Puff Pastry:

  1. Roll out the puff pastry dough and cut into desired shapes (squares or circles).
  2. Brush lightly with egg wash.

Bake the Pastry Shells:

  1. Place the shaped pastry on a baking tray and bake in a preheated oven at 150°C for 20 minutes, or until puffed and set.
  2. Allow to cool completely.

Assemble 

  1. Spoon or pipe the cheese-date filling into the cooled pastry shells.
  2. Top with a slice of local pastrami.

Final Bake:

  1. Return filled pastries into the oven and bake at 170°C for 10 minutes, or until golden brown.

Serve:

  1. Garnish with additional chives, orange zest, or pastrami if desired. Serve warm and enjoy!
