Family style cheesecake with a cookie crust, topped with a peanuts butter flavored Kiri cream and chocolate
Ingredients
For the Biscuit Layer
- 1 cup of crumbled digestive biscuits
- 3 tablespoons unsalted butter (melted)
For the Kiri Icing
- 10 Kiri square portions
- 2 sheets gelatin
- 1 cup of milk
- 1 cup of sugar
- 2 teaspoons vanilla
- 1 cup of unsweetened dark chocolate (melted)
- 1 cup of peanut butter
- 1 cup of whipped cream
Cooking steps
For the Biscuit Layer
- Mix the biscuit crumble with the melted butter until the mixture is evenly moist.
- Spread the crumble in the pan and bake for 7 minutes. Leave it to cool for 10 minutes.
For the Kiri Cheesecake
- Soak the gelatin for 10 minutes then drain. Melt the gelatin in the milk on low heat.
- Mix the Kiri cheese in a blender with sugar and vanilla till it becomes spreadable, then pour in the gelatin slowly.
- Divide the mixture into two equal portions. Add the melted chocolate gradually to one of the portions with the whipped cream, then mix the peanut butter with the rest of the remaining mixture.
- Spread the chocolate mixture evenly on the cooled biscuits using a spatula. Let it cool in the fridge for 30 minutes. Then pour the peanut butter mix over the chocolate layer and chill the cake for 6 hours before serving.
