Want to take your cheesecake up a notch? Meet the Khushaf Cheesecake. A local spin on one of our favorite desserts. Quick, easy and perfect for your gathering
Ingredients
Crust ingredients:
- 1 cup graham cracker crumbs (170g)
- ¼ cup slivered almonds
- ¼ cup pine nuts
- 2 tbsp sugar
- 1 tbsp brown sugar
- 7 tbsp melted butter
Filling ingredients:
- 24 Kiri squares
- 120 g sugar
- 200 g Greek yoghurt
- 150 ml whipping cream
- 1 ½ tsp vanilla extract
- 1⁄8 tbsp salt
- 2 eggs
- 25 g corn starch
- ½ cup diced fried fruits
- Qamar Al Deen syrup
- 1 Kiri square
Cooking steps
Crust:
- Preheat oven to 150°
- Process crust ingredients together
- Pour crumbs into pan and press firmly
Qamar Al Deen syrup:
- Heat in pan to reduce
- Let it cool then mix in Kiri square
Cheesecake Filling:
- Stir Kiri cream cheese until smooth
- Add sugar
- Add yoghurt, vanilla extract, and salt, and stir
- Add lightly beaten eggs one at a time
- Add chopped dried fruits
- Pour batter over crust
- Bake for 75 minutes at 160°
- Cool until room temperature
- Transfer to fridge overnight
- Pour Syrup on top
- Garnish with pine nuts and dried fruits
