Stuffed bell peppers with Kiri and homemade pesto

Ingredients

For the Bell Peppers

  • 6 Kiri Square Portions
  • 3 bell peppers
  • 125g of dried tomato
  • 40g of walnuts
  • 1 tbsp of olive oil
  • Salt

For the Pesto

  • 40g of fresh basil
  • 2 tbsps of olive oil
  • 25g of pine nuts
  • 30g of parmesan cheese
  • Salt

Cooking steps

Preparing the Stuffed Bell Peppers

  • 1 Cut the bell peppers
  • 2Clean the bell peppers from the inside, then start stuffing them with Kiri Square Portions, walnuts, dried tomatoes and then cover it with another Kiri square portion.
  • 3Place the bell peppers in a baking tray and place it in the oven at 180°C, for 20 minutes.
  • 4For the pesto, mix the fresh basil, pine nuts, parmesan cheese and olive oil.
  • 5Remove the bell peppers from the oven and drizzle the pesto sauce over it.
