Salty Cheesecake

For the base:

  • 3 cups processed Pretzels or salty crackers
  • 1 cup walnuts
  • 3 tbsp. olive oil

For the cheese filling:

  • 18 Kiri® squares
  • 1cup yoghurt
  • ½ cup pitted and chopped olives
  • ½ cup pomegranate seeds
  • ½ cup finely chopped fresh mint
  • ½ cup chopped tomatoes

For the Garnish:

  • Chopped pistachios and pomegranate seeds

Cooking Directions

  1. Mix processed Pretzels or salty crackers with olive oil and place them in the bottom of the glasses
  2. In a large bowl and using an egg beater, beat Kiri with yoghurt until a creamy texture is obtained
  3. Add the vegetables and mix well
  4. Top the crust in the glasses with the cheese mixture
  5. Flatten the surface using a spoon
  6. To the filling with pistachios and pomegranate seeds
  7. Refrigerate before serving
  8. Drizzle some olive oil on top
  9. Serve
